Whole Orange Cake
180 grams Melted Butter
1 cup of Caster Sugar
1 1/2 cups SR Flour
Preheat oven to 180C. Grease and line the base of a 12x22cm loaf tin.
Cut Orange into large chunks with the skin left on! Place in a large food processor and blend until well pureed. Add all other ingredients, then process until well combined.
Pour into tin and bake 50 minutes or until cooked.
Cool in tin for 5 minutes and then turn out onto a wire rack.
Cake can be iced when cool. Mix 2 1/2 cups icing sugar with 2 tbspns melted butter. Add the juice and rind of one orange a little at a time to make a spreadable consistency. Decorate with orange or lemon rind.
